Lalu's Cafe's recipe for delicious beets:
Toss the beets in olive oil and kosher salt, wrap individually in foil.
Roast at 400 until just fork tender (45 minutes to an hour-depending on size).
Allow to cool slightly, peel while still warm.
Slice and toss in a bowl with more olive oil, a whole clove of garlic, and a splash of good quality red wine vinegar. Check the seasoning and add salt if needed.
